Producer Spotlight - Ostara Vermouth (Lewes, Sussex)

The idea for Ostara English Hedgerow Vermouth was born in the East Sussex countryside where founder Julian Davies grew up.

Ostara is an innovative new approach to a familiar old category: creating vermouths which are easier to drink and somewhat more versatile than the traditional brands. This is achieved by taking a blend of English wines and infusing them with a recipe of gorgeous hedgerow botanicals to make a delicious, lighter style of vermouth which is eminently gluggable on its own, with good tonic, or as an ingredient in classic cocktails such as the negroni.

It’s a story of love for nature, and the formative memories our countryside can shape. The name comes from what our ancient ancestors called the Spring Equinox and the Goddess of nature, and was chosen to represent that wonderful time of rebirth, and of celebrating all that nature has to offer. The liquid takes a blend of fine English wines from vineyards across
the South East (masterfully blended by Julian and Cassidy Dart MW) and to that adds a concoction of countryside herbs and plants such as nettle, hawthorn leaf, burdock root, hyssop, thyme, dandelion, lavender, coriander seed, cassia, angelica root, wormwood, meadowsweet, southernwood and bilberry to create vermouths which are true to the style but eminently lighter, more approachable, and more attractive to a broader base of consumers.

The development of Ostara took over 2 years of painstaking research, trial and error, wine blending, botanical macerating, lockdown hiatus and prototype tasting to get to today’s juncture: a new approach and a house style of vermouth which is bound to breathe life into a familiar but slightly underestimated category.

Julian also particularly wanted to mention that, as a brand that pays homage to nature, it’s logical that he’d try to create the brand in an ethical way. As such, his bottles are lightweight glass was chosen to minimise their environmental impact and his labels are made from recycled citrus pulp – a European first that aims to minimise our overall carbon footprint.
